Mexican Street Corn Fritters are a fun way to enjoy the flavors of Mexican Street Corn in an easy to serve fritter. In traditional Mexican street corn, ears of fresh sweet corn are grilled and charred, covered in mayonnaise then seasoned and sprinkled with cheese. These fritters have the spices of the original and more! Fresh cilantro and green onions add another layer of flavor.

- Cotija and Queso Fresco are Mexican cheeses that you can crumble over the top of the fritters. Cotija is is an aged chese while Queso Fresco is fresh and not aged.

SUBSTITUTIONS:
- If fresh corn is not available, frozen ears of corn which have been defrosted can be substituted.
- If you cannot find Mexican cheeses at your grocery store, feta cheese would be a good substitute.
- You can use vegetable oil or olive oil to replace the canola oil.
- You can replace the all purpose flour with whole wheat flour.
- Corn flour can be used in place of the cornmeal.
- The fresh cilantro can be substituted with 2 teaspoons dried cilantro.
- If you do not have green onions, yellow or red onion can be substituted.
HOW TO STORE LEFTOVER MEXICAN STREET CORN FRITTERS:
- You can store the leftover fritters in an airtight container in the refrigerator for 3-5 days.
- You can freeze the fritters for 2-3 months. The best way to do this is to place the fritters into the freezer on a baking sheet in a single layer.Once the fritters are frozen, remove them from the baking sheet and place them into an airtight freezer bag or container before returning them to the freezer.
HOW TO REHEAT MEXICAN STREET CORN FRITTERS:
- You can reheat the fritters in an air fryer. Heat the fryer to 350 degrees and cook the fritters for 2-3 minutes.
- You can reheat the fritters in a preheated 350 degree oven on a baking sheet. It will take 10-15 minutes to heat them through.
- You can reheat the fritters covered in the microwave on a microwave safe plate. It should take 1-2 minutes to heat them though.

How to Roast Corn in the Oven will show you how. In a large bowl combine the flour, cornmeal, cumin, chili powder, salt, and pepper. Add the beaten eggs into the dry ingredients and stir in completely. Stir in the fresh corn kernels, cilantro and green onions. Stir the fritter batter until everything is thoroughly combined. Scoop ¼ cup of the corn mixture,. Form it into a ball, then flatten it into a fritter. Continue until you have used up all of the corn mixture. You should end up with 10 fritters. Heal the canola oil in a large skillet over medium heat. Add the fritters to the hot oil in the skillet and cook for 2 minutes on each side until you have crispy corn fritters that are golden brown. Blot any extra oil off the fritters with a paper towel.
