SOME THINGS TO KNOW: FAQ’S
INGREDIENT TIPS:
- Opt for extra virgin olive oil for a richer flavor and aroma. It adds a subtle, fruity undertone to the soup. Read about the Types of Olive Oil.
- Green or brown lentils are ideal as they hold their shape well after cooking. Rinse and sort them before use to remove any debris.
SPECIAL EQUIPMENT NEEDED:
- Large Pot or Dutch Oven: A large pot or a Dutch oven is essential for making soup. It should be large enough to hold all the ingredients comfortably, with ample space for stirring. A Dutch oven is particularly good for even heat distribution.
- Cutting Board: Needed for chopping vegetables like carrots, onion, and celery.
- Sharp Knife: A good, sharp knife will make prepping the vegetables much easier and safer.
- Measuring Cups and Spoons: For accurately measuring ingredients such as olive oil, lentils, brown rice, and spices.
- Wooden Spoon or Heat-Resistant Spatula: Useful for stirring the ingredients in the pot to prevent sticking and ensure even cooking.
- Ladle: For serving the soup into bowls.
SUBSTITUTIONS:
- You can substitute white rice or wild rice for the brown rice in this recipe. You will need to adjust the cooking time however as the white rice will require less cooking time and the wild rice will require more cooking time. The best thing to do is to check the instructions for cooking on your package of rice.
- This recipe uses green lentils. They are similar to brown lentils and you could easily substitute them. Red lentils could also be used. Check out Everything You Need to Know About Lentils to learn about the varieties. You could also use a combination of lentils as long as they have similar cooking times.
- You could substitute chicken broth in the recipe if you do not require a vegetarian meal.
- For a similar acidity, you can substitute the apple cider vinegar with red wine vinegar or lemon juice.
- Quinoa, barley, or farro can be great substitutes for brown rice. Keep in mind that cooking times can vary with different grains.
- Fresh tomatoes (peeled and chopped) can be used instead of canned tomatoes.
- Italian seasoning can work as a substitute for the oregano and basil. Fresh herbs can also be used but should be added towards the end of cooking to preserve their flavor.
HOW TO STORE LENTIL BROWN RICE SOUP:
- You can keep any leftover lentil rice soup in the refrigerator in an airtight container for 3-5 days.
- This soup will freeze well and can be kept in the freezer for 2-3 months. Make sure it is placed into an airtight freezer container. Defrost the soup overnight in the refrigerator.
HOW TO REHEAT LENTIL BROWN RICE SOUP:
- To reheat the soup on the stove top, place the leftover Lentil Brown Rice Soup into a large stock pot to reheat over medium heat. Both the brown rice and lentil absorb liquid and the soup may have lost some liquid while sitting. You can add a couple cups of veggie broth or a couple cups of water if needed before reheating the soup based on the amount of liquid needed.
- To reheat the soup in the microwave, use a microwave-safe bowl. Cover it with a microwave-safe lid or a paper towel and reheat on high, stirring occasionally until hot. This usually takes about 2-3 minutes, depending on the microwave.
