Cranberry Orange French Toast Bake is a wonderful warm breakfast that you put together the night before and bake in the morning. It is slightly sweetened with maple syrup and has a nice orange flavor from fresh squeezed orange juice and zest.
You can serve this with maple syrup but it really is sweet enough to stand on its own. You can be flexible with the kind of bread you use and you can mix them if you are using up odds and ends. I have given you my suggestions in the ingredient section.

Cranberry Orange French Toast Bake

- 4 large eggs
- 1½ cups whole milk
- ½ cup fresh squeezed orange juice
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 4 cups bread cubes cut into one inch cubes (challah, baguette or brioche)
- ½ dried cranberries

Instructions
THE NIGHT BEFORE:
Beat the eggs in a large bowl with a whisk. Add the whole milk, orange juice, maple syrup, vanilla extract, and orange zest. Whisk everything together thoroughly.
Spray a 9 inch square baking pan with cooking spray.
Add the bread cubes to the pan evenly.
Sprinkle the dried cranberries evenly over the bread.
Pour the milk mixture over the bread cubes in the pan. Make sure that all the cubes are covered in the mixture. Cover with a foil or plastic wrap and place into the refrigerator overnight.
THE NEXT MORNING:
Preheat the oven to 350 degrees.
Remove the cover from the pan and place it in the oven.
Bake for 50-55 minutes, until the top is completely formed and golden brown.
Serve with maple syrup if you want additional sweetness.
