If you are a fan of the classic Reuben sandwich, you are going to like this Reuben Melt Dip. It has all the great flavors in a simple to make, six ingredient dip.
This dip is simple to make and bakes in 20 -25 minutes. You could easily put it together a day or two in advance and bake it when you are ready to serve it.
This dip should be served with cocktail rye bread, rye crackers or toasted rye bread. As pictured, I simply toasted rye bread, cut the slice in half down the center, trimmed the crusts off each half to create two squares and then cut them on a diagonal to form triangles.

Place the cream cheese into a medium size bowl. Beat until fluffy with either an electric mixer or whisk. Add the sour cream, Russian dressing, corned beef, Swiss cheese and sauerkraut. Use a rubber spatula to incorporate them into the cheese base.
Spoon the mixture into a baking dish that holds 4 cups.
Rueben Melt Dip

- 4 ounces cream cheese, at room temperature
- ¼ cup sour cream
- ¼ cup Russian dressing
- 4 ounces corned beef, finely chopped (1 cup)
- 1 cup Swiss cheese, grated
- 1 cup sauerkraut, finely chopped
Instructions
Place the cream cheese into a medium size bowl. Beat until fluffy with either an electric mixer or whisk. Make sure it is at room temperature to make the process easy.
Add the sour cream and Russian dressing. Mix in well.
Add the corned beef, Swiss cheese and sauerkraut. Use a rubber spatula to incorporate them into the cheese base.
Spoon the mixture into a baking dish that holds 4 cups. The cooking time is based on using a dish that is filled close to the top.
Bake for 20- 25 minutes until the dip is lightly browned and bubbling at the edges.
Serve with either Rye crackers or Rye bread toasted and cut into triangles.
