Lasagna Soup is an easy way to enjoy the flavors of lasagna without all of the work. This comforting soup cooks in about 35 minutes so it could be a weeknight dinner option. Because it is entirely made in one pot, it will be a simple clean up.
Lasagna Soup has a tomato broth and all the seasonings found in a traditional pasta sauce. The ground beef and two kinds of cheeses, make it filling, flavorful and delicious.

- 1 tablespoon olive oil
- 1 pound ground beef
- 1 cup yellow onion, chopped
- 4 cloves garlic, minced
- 28 ounce can crushed tomatoes
- 2 tablespoon tomato paste
- 8 cups vegetable broth
- 1 tablespoon Italian seasoning
- 1 bay leaf
- 1 teaspoon kosher salt
- ½ teaspoon crushed red pepper
- 6 lasagna noodles, broken into 2 inch pieces
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
Instructions
Heat the olive oil in a large stock pot over medium low heat. Add the ground beef, onions and garlic and cook until the ground beef is no longer pink. About 5 minutes.
Add the crushed tomatoes, tomato paste, vegetable broth, Italian seasoning, bay leaf, kosher salt, and crushed red pepper.
Bring to a boil. Reduce the heat to medium low and simmer for 20 minutes, uncovered.
Add the lasagna noodles to the pot and simmer for an additional 10 minutes until the noodles are tender.
Stir in the mozzarella and Parmesan cheese. Serve.
