    Boston Baked Beans

    Boston Baked Beans

Boston Baked Beans are a popular barbeque side dish. They are made with white beans that soak overnight, get parboiled  then cook for several hours with a combination of sweet and savory ingredients.

The history of these beans goes all the way back to the English settlers in New England who adapted them from the Native Americans.

These beans will go well with just about anything that you are grilling. They are slightly sweet with the addition of molasses and brown sugar. Bacon and onions provide a nice contrast. Check out, 30 Simple Summer Cookout Side Dishes for some other grilling sides.

There are pots sold specifically for Boston Baked Beans. You can find one on Amazon. A covered dutch oven would. also work well.

Serves: 8 servings Prep Time: 20 minutes Cooking Time: 5- 6 hours

    Ingredients

    • 1 pound bag dried beans (White Navy Beans or Great Northern white beans)
    • 1 medium onion, cut into quarters
    • 6 slices bacon, cut into chunks
    • ½ cup tomato ketchup
    • ½ cup unsulphured molasses
    • 4 tablespoon brown sugar
    • 1 teaspoon dry mustard
    • ½ teaspoon kosher salt
    • ¼ teaspoon black pepper
    • boiling water

    Instructions

THE NIGHT BEFORE YOU PLAN TO SERVE THEM:

Place the beans into a colander and rinse well. If you see any cracked beans, remove them.

Place the beans in a large saucepan and cover them with water.

Let the beans soak over night.

The next day, parboil the beans for 30 minutes. Bring them to a boil over high heat and then reduce the heat to medium low to keep them at a simmer.

Preheat the oven to 325 degrees. Place your rack into the middle of the oven.

    Drain the beans.

Place the quartered onion into a bean pot or large dutch oven with a lid.

Add the bacon to the bottom of the pot.

Add the drained beans to the pot.

Add the ketchup, molasses, brown sugar, mustard, salt and pepper to the pot.

Add enough boiling water to cover the beans.

Place them covered into the oven. Bake for 5-6 hours, removing them from the oven every one to one and a half hours to stir and add more boiling water to keep the beans covered.

Taste the beans after 5 hours of cooking time to test for tenderness. If they are tender take them from the oven. Add additional cooking time as needed to achieve the desired tenderness.
